Since Olga’s death, Domaine Olga Raffault has been run by her granddaughter Sylvie and her husband Eric de la Vigerie. “The estate has terrific plots in the Savigny-en-Veron district, right by the Vienne riverbanks. The winemaking is most traditional. The grapes are, handpicked and fermentation takes place in stainless-steel. The wines are then aged in larger, neutral oak and sometimes chestnut-a traditional wood barrel in the region.”-Importer
This is the Domain’s introductory village Chinon, and it serves as a prime example of Cabernet Franc in its pure form. I hoarded a number of cases away to fulfill this month’s wine share, and to ensure we had a steady flow for our restaurant Snuff Mill, where I currently have it by-the-glass.
In the glass, the wine is unabashedly Cabernet Franc. On the nose, the wine exudes cassis, loamy earth and tobacco leaf . On the palate the wine is medium bodied, and the green pyrazines roll through a silken finish.
The wine is a perfect winter-warmer, and paired perfectly with my wife’s hearty Spaghetti Bolognese she prepared last Sunday.
I would suggest one seek out the Domain’s additional bottlings as we procure them throughout the year. They serve as benchmarks for the region and are still exceptional values.
